식용유지류, 조미김, 튀김식품, 유탕유처리식품, 식용번데기 가공품 등에 적용한다.

2)분석원리
Analysis Principle
"과산화물가"라 함은 규정의 방법에 따라 측정하였을 때 유지 1kg에 의하여 요오드화칼륨에서 유리되는 요오드의 밀리당 량수이다.
The peroxide value is defined, when it is measured according to a regulated method, as the amount value of iodine per ml(millilitre) isolated from potassium iodide per 1 kilogram of fat or oil.

3)시험조작
Test Procedure
검체(test sample 또는 test portion) 약 1-5g을 달아 초산(acetic acid) : 클로로포름(chloroform)(3 : 2) 25ml에 필요하면 약간 가온하여 녹이고 쓸때에 만든 포화요오드화칼륨용액(iodine potassium iodine solution) 1ml를 가볍게 흔들어(swirl) 섞은 다음, 어두운 곳에 10분간 방치하고 물 30ml를 가하여 세게 흔들어 섞은 다음 전분시액(starch indicator solution) 1ml를 지시약으로 하여 0.01N 티오황산나트륨(sodium thiosulfate)액으로 적정(titrate with)한다. 따로 공시험(blank test)을 하여 보정(revise with)한다.
Weight the test sample of 1~5g into Acetic acid:Chloroform(3:2) 25ml and melt a little bit if needed. Add and gently swirl the iodine potassium iodine solution 1mL, and allow the solution to stand for about 10 minutes in a dark place. After adding 30ml distilled water and virorous agitation, Titrate with 0.01N sodium thiosulfate with adding about 1ml of starch indicator solution. Revise with a separate blank test.
